I love grilling new potatoes in the summer because I can make the entire meal on the grill and don’t have to use the stove top or oven. You can use Yukon Gold, Red Bliss or any potato. I adapted the recipe from Cook’s Illustrated and it is a quick way to make moist and flavorful potatoes on the grill. In a microwave safe bowl add olive oil, salt, pepper, and you can add minced garlic or garlic powder and fresh or dried herbs. Cut potatoes (you can also use sweet potatoes) in half or fourths and toss in the oil mixture. Microwave for 7-8 minutes or until fork tender and drain the oil. You can make these potatoes up to this point earlier in the day and set aside. To grill them, tumble the potatoes onto a hot grill and use tongs to arrange them cut side down.
