Pulled Pork Sandwiches

Ingredients

  • Pulled Pork Sandwiches
  • The pork can be made several days before and to really impart a lot of flavor. It's best to allow the pork to marinate with the rub for 24 hours before you roast. I made a double recipe and roasted 2 pork shoulders and froze the remaining pork for another day. I bought several packages of coleslaw mix and tossed it together. There are so many great gourmet barbecue sauces, I saved myself some time and bought a jar to mix with the pulled pork.
  • Serves 8
  • 1 (5 to 7 pound) pork roast, preferably shoulder or Boston butt
  • Marinade Ingredients:
  • 4 tablespoons kosher salt
  • 1 tablespoon freshly ground black pepper
  • 1 1/2 cups light brown sugar
  • 1/4 cup paprika
  • 2 to 3 sprigs thyme, leaves only
  • 4 cloves garlic
  • 2 tablespoons Dijon mustard
  • 1/4 cup red wine vinegar
  • 1 teaspoon cayenne (or to taste)
  • 3 tablespoons extra-virgin olive oil
  • 2 onions, peeled, quartered, and put under the pork as it roasts
  • 1 ½ cups prepared barbecue sauce
  • 16 Hawaiian rolls - cut almost in half
  • Garlic Butter:
  • 1/3 cup softened butter
  • 2 teaspoons garlic powder
  • salt and pepper to taste
  • 8 cups prepared coleslaw

Instructions

Place the pork fat side up in a roasting pan. In a food processor, add all of the marinade ingredients and pulse until well combined. Add olive oil and pulse to make a paste. Rub marinade all over the pork. Cover the pork with plastic wrap and marinate in the refrigerator for at least 3 hours or up to overnight.

Allow the meat to sit at room temperature for 30 minutes before cooking. Preheat the oven to 325 degrees.

Place the onions under the pork and roast the pork for 3 1/2 hours, uncovered, until the outside is crispy-brown (it should look like mahogany). Let the meat rest on a cutting board for 10 minutes before pulling the pork apart with 2 forks. Add pork to a bowl and add enough heated barbecue sauce until the pork is thoroughly coated and moist. Place in serving dish.

Mix the butter and garlic powder together and spread on the Hawaiian rolls. Heat a flat skillet over medium high heat and place the rolls buttered side down on the skillet and cook until lightly browned. Remove to serving platter.

To serve the pulled pork sandwich: Add the pork to the roll and top with coleslaw.
