Thai Pork and Pineapple Kebabs
Ingredients
- Thai Pork and Pineapple Kebabs
- You can also use 4 thick cut pork chops and cut them into 1-inch pieces
- Serves 4
- 1 pork tenderloin, diced into 1-inch pieces
- 1 cup coconut cream
- 1 tablespoon oil
- 2 garlic cloves. minced
- 2 kaffir lime leaves, finely minced (optional)
- 1 tablespoon grated lemon grass
- 1 tablespoon grated fresh ginger
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1-2 teaspoons Sriracha sauce or Thai red curry paste
- juice of 1 lime
- salt and fresh ground black pepper

- 2 cups of pineapple chunks (either fresh or canned)
- 1 onion, peeled, cut lengthwise and cut into slices
Instructions
In a mixing bowl add all of the marinade ingredients and mix well. Add pork and mix well. Allow to marinate for at least 20 minutes or several hours.
Use a metal skewer (or wood skewers that have been soaking in water for an hour) and thread the pork pieces, pineapple and onion slices onto 4 skewers.
Preheat grill and cook the pork skewers for 3-4 minutes each side until they are browned.
Remove and serve.
