Blueberry Mojito
Ingredients
- Blueberry Mojito
- This is a great cheat recipe to be able to make large batches of mojitos for parties. You can make the traditional mojito and not add the blueberries, but they are a great addition. You can also have this as a non-alcoholic drink and kids love it.
- makes 10 drinks
- 2 cans frozen limeade concentrate, thawed
- 2 large stems of fresh mint, washed, leaves removed
- 1 lime juiced
- 1 lime sliced
- 1/2 cup blueberries (optional)
- rum or mango rum
- ice
Instructions
In a pitcher, add limeade, mint, lime juice, and sliced limes. With a wooden spoon, gently muddle the limes and mint. Add the blueberries and gently muddle some of the berries. Can be made several hours ahead and kept in the refrigerator.
To serve: In a tall glass add ice, 1 oz. of rum (optional), some mojito mixture and top it with a splash of sparkling water. Stir well and garnish with fresh mint and lime. Serve.
