Ingredients
- Oatmeal Cookies with Chocolate Chips and Pecans
- These cookies are wonderfully soft and chewy and the dried cranberries add a nice flavor. You can also add some cinnamon and ground cloves and raisins for an oatmeal and raisin cookie.
- Makes 2 1/2 dozen
- 12 tablespoons (1 1/2 sticks) butter, room temperature
- 1 1/2cup dark brown sugar
- 1 egg, room temperature
- 2 teaspoons vanilla
- 1 1/4 cup flour
- 3/4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 11/4 cup old fashioned rolled oats
- 1 cup of pecans or walnuts, chopped
- 1 cup dried cranberries or dried cherries
- 3/4 cup chocolate chips
Instructions
Oven at 350 degrees.
In a mixing bowl, add butter and cream until smooth. Add brown sugar and cream until light and fluffy, about 1 minute. Add egg and vanilla, and mix until creamy, about 1 minute. Add flour, baking powder, salt, and baking soda, and mix until well incorporated. Add oats, nuts, cranberries, and chocolate chips, and mix until well incorporated.
On a cookie tray, use a 1-inch cookie scoop and scoop cookies onto tray. Bake for 10 minutes. Do not overcook. The cookie should be soft in the center and still look a little wet and very lightly browned. Remove from the oven and let sit for 3-4 minutes. With a spatula, remove to cooling rack or waxed paper and allow to cool.
