Banana Bread

Ingredients

  • Banana Bread
  • This banana bread is moist and has the right amount of spice. It is better eaten the next day after the flavors have been able to mellow.
  • Makes 1 loaf
  • 1 stick of butter, room temperature
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla
  • 2 eggs, room temperature
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 2 ripe bananas, mashed
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

Preheat oven to 350 degrees.

Butter and flour a bread loaf pan.

In a mixing bowl, add butter and mix for 1 minute. Add sugars, and mix until well incorporated. Add vanilla and eggs and mix until well incorporated. Add flour, soda, salt, cinnamon, cloves, and nutmeg, and mix until incorporated. Add mashed bananas (I just use my hands to and squeeze the bananas into the batter) and walnuts and mix until incorporated.

Add batter to bread loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and place on cooling rack. Cool for 10 minutes and remove bread from pan. Allow to completely cool.
