Grilled Salmon with Mango Salsa

Ingredients

  • Salmon with Mango Salsa
  • This mango salsa is also good with chicken, pork and as an appetizer served with tortilla chips. The salsa can be made the day before.
  • Serves 4
  • 1 mango, peeled, pitted, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped red onion
  • 1 tablespoon fresh lime juice
  • 2 teaspoons minced seeded serrano or jalapeno chili
  • 1 teaspoon grated lime zest
  • 1 garlic clove, finely chopped
  • 1 1/2 tablespoons olive oil
  • salt and pepper to taste
  • 4 salmon steaks

Instructions

In small bowl add salsa ingredients and mix well. Season salsa with salt and pepper to taste.

Prepare barbecue (medium-high heat), or heat a large skillet over medium high heat with 2 tablespoons of olive oil.

Brush salmon with olive oil if grilling and sprinkle with salt and pepper. Grill until just opaque in center, about 5 minutes per side.

Serve with salsa.
