- Mojito
- This is my quick version of the famous Cuban Mojito. It takes so many limes to render 2 cups of juice that I came up with using frozen limeade for quick and simple drinks. These are also great without the rum and make a very refreshing summer drink. Add blueberries, raspberries or blackberries to the drink to mix it up. You can also use any kind of rum and it is delicious.
- Serves 4
- 1 can of frozen limeade, thawed
- 2 fresh limes, 1 juiced, and 1 thinly sliced
- 2 stems of mint, leaves removed from the stems and torn
- 4 ounces mango rum
- 1 bottle of plain sparkling water
Instructions
In a small pitcher, add limeade, lime juice and mint. Use a wooden spoon and gently muddle the mint to break up the leaves and release the essence. Add sliced limes and stir.
Fill a glass of ice and add rum. Fill the glass 1/3 full with the lime mixture and top off with sparkling water to taste and a fresh mint sprig for garnish.
