Hummus, Cucumbers, Tomatoes, Red Onion and Pomegranate Molasses in Pita Pockets

Ingredients

  • Hummus, Cucumbers, Tomatoes, Red Onion and Pomegranate Molasses in Pita Pockets
  • This is a nice fresh appetizer or sandwich and you can use mini pita bread or regular sized pita. I like to use Persian cucumbers because they have less seeds than English cucumbers. You can add crumbled feta cheese to the salad mixture and the pomegranate molasses gives a nice sweet and sour kick to the mixture. You can also use balsamic glaze instead of the pomegranate molasses.
  • Makes 24 appetizers
  • 3 Persian cucumbers or 1 English cucumber, thinly sliced and drained
  • ½ pint cherry tomatoes, washed and cut in half or fourths
  • ½ red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, finely chopped
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • pomegranate molasses or balsamic glaze
  • ¾ cup hummus
  • ½ cup crumbled feta cheese – optional
  • 12 mini pita, cut in half or 6 pita cut in half for larger sandwiches

Instructions

In a bowl, add all ingredients except the pomegranate molasses, hummus and pita bread and mix well.

Put hummus in a piping bag or a freezer bag and cut a corner off and pipe some hummus into each pita. Add some of the salad mixture to the pita and drizzle some pomegranate molasses over each pita and serve.
