Greek Salad Salsa with Pita Chips
Ingredients
- Greek Salad Salsa with Pita Chips
- Serves 6-
- 1 large ripe tomato, seeded and chopped
- 3 green onions, thinly sliced
- 1/2 cucumber, peeled, seeded, and coarsely chopped
- 1/2 cup black olives, pitted and sliced
- 1/4 cup minced fresh leaf flat parsley
- 2 tablespoons minced fresh oregano
- 2 tablespoons lemon juice
- 1/3 cup olive oil
- salt and pepper to taste
- 8 oz. feta cheese, crumbles (1 1/2 cups)
- Pita chips
Instructions
In a medium bowl and add all ingredients except the feta cheese and mix gently. Gently mix in the feta cheese and taste for seasoning.
Refrigerate until ready to use.
