Buying a Turkey
A fresh, organic turkey is the best choice. I also recommend finding a kosher turkey. They are usually a free-range turkey, and have been soaked in salt brine, which really makes the bird juicy and flavorful and saves you the time of doing it yourself. Frozen turkeys are fine, but need several days in the refrigerator to dethaw, and several hours to come to room temperature before you roast it so plan accordingly. I do not like to buy turkeys that have been injected with “butter”. Who knows what chemicals they are putting in the turkey.
